Sponge cake is a cake based on flour, sugar, and eggs, and is sometimes leavened with baking powder. Since sponge cakes are not leavened with yeast, they are popular dessert choices.

Method of Preparation
Ingredients:
5 eggs
2 cups powder sugar
2 cups maida
1/2 tsp baking powder
1 tbsp vanilla essense
1/8 tsp salt
Butter 250gms
Hot water ΒΌ cup
Preparation Methods:
Preheat oven at 180 degrees
Sieve maida and baking powder
Beat egg whites only till foamy.
Add the yolks and beat till equal consistency
Add salt, essence and sugar powder to the eggs and beat well
Add butter and mix well
Add the maida and mix well for good consistency
Add hot water and mix well.
Grease the baking tray with butter and sprinkle maida. Dust the excess maida from the tray.
Pour the cake batter in to the tray.
Bake it at 180 degrees for 35 mins.
To test if it is fully baked prick the cake with a knife and check if it sticky. If the knife is clear, the cake is fully baked. Else bake for extra 5 mins.
